Moist Apple Coffee-cake

I was experimenting in the kitchen trying to come up with something warm and fresh baked for my family to wake up to and this is what I made

Ingredients

Granola Topping
            3 cups whole grain oats
            ½ cup butter or margarine, melted slightly
            ½ cup honey
            2 T. cinnamon 

Coffee-cake
2 cups flour
1 tsp. baking soda
½ tsp. baking powder
1/3 cup milk
1 large egg
1 can Apple Pie filling

 Measure oats into a bowl and add melted butter or margarine, stir to evenly coat. Add honey and stir with a fork, pressing to break up clumps until evenly coated.

Spread evenly on a baking sheet and bake for 10 min at 325° degrees or until partly baked. You want the honey to begin to crystallize, but it will be baked further with the cake.

While granola is roasting, combine dry ingredients, stir to mix and set aside. In a small bowl, break egg and whisk slightly to break up the yoke, add the milk and stir well. Add the can of Apple pie filling to the milk mixture and stir until combined.  Add to the dry ingredients and mix until doughy and thick. Spoon into a lightly greased, glass casserole dish and add the granola topping. Bake at 350° for 30 minutes, if the granola starts to get too dark you may want to cover just the granola with foil. Check doneness with a toothpick.
