I put 7 pounds boneless, skinless, chicken breast in the crockpot, on low this morning at 9 a.m. along with 1 cup of water and 2 chicken bouillon cubes and 1 whole onion sliced thinly. At 3 o'clock in the afternoon I took my electric hand mixer and put it into the crockpot (on low speed) and shredded chicken. Drained the chicken in a colander, took the broth that was in a bowl (under the colander) and poured the broth into ice cube trays (so I can use it later in other recipes).
For tonight’s dinner, I took 4 cups of the shredded chicken and added enchilada sauce and we had yummy chicken enchiladas. Then separated the rest of the chicken in 3 large ziplock bags, put them in the freezer to be used for other recipes.
